Cheeses From The Veneto: In addition to its DOC wines, the Veneto also produces eight well known PDO cheeses: Asiago, Casatella Trevigiana, Grana Padano, Montasio, Monte Veronese, Piave, Provolone Valpadana & Taleggio. But, even more exceptional are the rare artisnal cheeses from the Veneto. Ubriaco (drunken) cheeses originated in the Veneto. They are cows milk cheeses aged in wine must - grape skins left from wine production - that carry the flavor of Veneto wines. Ash-aging of cheese also originated in the Veneto and, though it has become more popular, Sottocenere al Tartufo (Under ash with truffles) from the Veneto is still the most luxurious variety.
